View Full Version : Yellow vs. Red Beets

So, I've been getting a lot of beets lately because they're in season at the farmers' market.
Generally, I roast them in the oven, dice them up and toss them with a dijon-balsamic dressing, blue cheese and toasted walnuts.
I've used the red beets primarily, but recently used yellow beets. Wow! The sweetness level seems totally different, with the yellow being more robustly sweet.
My question is this: Is this something you have noticed as well or did I just happen to get a particularly sweet variety?

I find beets to sometimes be a real "product of nature" whose MMV.
The range of flavors that come from each beet can be really different.
I've had some great golden beets and some others that were terrible & bland.
I love beets! I cook them like you do.
I also like to shred or thinly slice raw beets on a mandoline for a salad.
Mmmmm. A place I'm visiting this summer has homegrown organic beets that were picked just before the meal. They shred the beets & offer them for a make it yourself salad. Infreakincredible flavor!

I like beets too...just about anyway you can fix them. Mom always does harvard beets at Thanksgiving..not sure what started this tradition. It's the only time of the year that she fixes them. Well, that I know of. I also like pickled beets..straight out of the jar.

I'm a big fan of beets, and have them quite often. Just by luck, I bought a bunch at our recently opened farmers market, and they were a mixture of red and yellow. When cooked, the yellow beets had a sweeter taste to me. They were the first yellows I have tasted.
Another color change, I noticed this month, was carrots. For years I knew nothing but orange carrots. Now this summer, I see yellow carrots everywhere. The yellow carrots have less taste (milder taste) to me.
BTW, if you want to "fool with" your MD, eat a generous amount of red beets the night before your annual physical exam! :laughup:

I have never been a fan of beets or okra. I like almost every other veggie around. Weird.

Its funny you should say that Schuarta.
I recently was suffering from terrible stomach/gastro problems and went to the doctor for the usual battery of tests that they do when your digestive track isn't working right.
I had beets the night before. I'm wondering how much they liked the color magenta.
