I think someone chatted about the bacon fat on the DD&D thread. I haven't had his red beans at Rivershack, but his other specials have all been good.

I had written (perhaps on TOB) that I had the lunch special of grilled redfish with the hericots and thought that it was entirely too greasy. This coming from a guy that doesn't cringe at the use of bacon fat.

The DD&D episode showed that Chef Mike uses a lot of bf so at least he is upfront with it.
