I's sure like to try it. Was in Spain this past summer and ate some fine ham.
Going to Italy and Greece this coming summer. Not sure where else we might go (still planning). Probably back to Spain!

Funny. The resort we stayed at in Mexico had a leg of it on their daily breakfast buffet. No big deal.
St. James has Iberico around $81#. We tried some and all concurred, nothing special, definately not worth the $$$. FWIW, you can get 4-6 slices to satisfy your curiosity for about $10.

The key to really getting the most out of it is getting it to the right temperature.(not unlike cheeses) If you don't let it sit out for several hours to get to room temp, you just waste it....as said above, nothing special...if you have it when it's right...with little drops of sweat on it and the fat gets really creamy and yellow, it's fantastic...not necessarily worth that price....more like an expense account item.

In Spain, it is kept at room temperature and sliced right off the leg. In the market in Barcelona, numerous vendors had legs of different ypes/qualities.price hanging, with someone ready to slice it for you. Good Stuff!
