View Full Version : Mushy blackened redfish

I was at a popular resturant tonight and ordered the blackened redfish. Well, I ordered something else actually, but the waitress came back to inform me the appetizer guys were ready to leave and turned off a lot of the kitchen equipment...:eek: anyway, so I just ordered the redfish. I got it and it looked awesome. Nice colour on the outside and when I put my fork in it, perfect whiteness that didnt look over cooked and dried out. But, when I tasted it, it was completely mushy. No flakey pieces of fish, just mush. What a dissapointment.

I also tried someone else's scallop dish...eh. Scallops need a little salt and to be seared, that's pretty much it. These were seared nicely, but they didn't taste like anything.

I also got to taste the crabcake app, it was good but not really crabby good. There was crab in it but it wasn't the primary flavour.

Anyway, back to my fish, have you ever had redfish be mushy? What is that from, freezing?

Yeah JaG, I'd say freezing was the culprit.
Too many ice crystal damaging the flesh.

The only time I have seen "mushy" fish that tasted fine it had to do with IQF (individually quick frozen) product that had been iced with an extra heavy saline solution...kind of cooked/tenderized the meat. It doesn't happen much in my experience because it's a error with the fish processing.

And I don't even know if redfish come IQF.

Just a thought.

Could be too that since I was 'late' (though the kitchen was supposed to still be open and the waitress did take my order) that I got whatever they felt like giving me. I mean, it was in fact redfish, just not of any good quality. It was cute though that the waitress asked if she could box that up for me. Cute I tell ya.

Or maybe...it was because I was drinking red wine and I ordered fish....yeah, that it!
