Turkey Gumbo Anyone?

I have never made gumbo...
Please stop snickering.
My fiance has poo-pooed turkey noodle soup and has suggested I "just make some gumbo."
Any recipes would be greatly appreciated.

Just scale it down for home-cooking quantity and sub turkey for chicken.

P.S. A lot of the time I use an equivalent amount of oil instead of the butter and it's still delicious. I absolutely LOVE the richness of the butter but my husband's tummy has a different opinion.
